A couple of weekends ago, order/fire Brand Director Joel Tracey spent the day at the Piedmont Culinary Guild’s PCG Food and Beverage Symposium. The event was a gathering of farmers, chefs, culinary educators, mixologists, food writers, and other industry professionals from across the Carolinas for a weekend of examining our food culture. There was a kick off party at Free Range Brewing and two days of workshops such as Menu Costing, Farming as a Business, Half Cow Butchery, Mushroom Cultivation, Fermented Pickles and a Keynote presentation from Dr. Tom Hanchett.
